My preschoolers love when I make Shoestring Pie, also known as Spaghetti Pie. You need 6 ounces of cooked spaghetti in a large bowl, stir in 2 tbsp. margarine, 2 beaten eggs, and 1/3 cup Parmesan cheese. Form spaghetti mixture into a “crust” in a 10 inch pie plate. Fill crust with 1 cup cream-style cottage cheese (Ricotta cheese can be substituted), then cover with about 1cup of spaghetti sauce. Cover with foil, bake in 350 degree oven for about 20 minutes. Uncover and sprinkle with 1/2 cup shredded mozzarella cheese and bake for another 5 minutes or until cheese melts. Cut into wedges and serve. The kids love this and eating “shoestrings” is so much fun.
I have taken my hand – crank noodle & pasta maker to school and let the children all help make noodles from scratch. They then are divided into individual bags to take home to cook and eat with their family.
